I think the sushi article highlights an overall trend in American culture to return to the simpler roots of food and eating. Bread and beer have been forerunners and sushi seems like a logical extension of that movement. I am pleased to know that my favorite, mackerel, is regarded as a more traditional offering. I think, however, that bringing more traditional interpretations of food to people will actually lead to more heterogeneity because as people develop more cultured palates, they will seek more diverse offerings.
